My house will go on the market end of Feb 2026: after that it's living in the GX and AirBnBs/couch surfing. This is not in chronological order of build phases; some bits and pieces may be useful for your project.
Starting on top: Prinsu Pro rack with 2 Pelican cases, traction boards, and the Starlink Mini: not an inch to spare, lengthwise. For now the traction boards and cases have to be uninstalled after every outing - to fit the GX in the garage, but pretty soon they will be up there full time. The mount for the Starlink (Strikerfab) is low profile (no profile!!) and allows for permanent installation.
Footnote to the Prinsu rack: the manufacturer missed threading the front (silver color) crossbar. Rather than waiting for a replacement, I got a tap and die set and threaded the 4 holes. Not impressed with Prinsu's customer service after the fact: but I do like the looks and sturdy feel of the rack.

For storage/sleeping platform I went with Wheels/Feels: they only make the sleeping platform for the 13" high drawer system - to extend over the folded 2nd row seats, but they worked with me to sell me the material/hardware so I could massage it in to fit with their 4" drawer system.
Cardboard templates were key.

For the interior Molle panels and shelf I went with the aluminum product from cartrimhome. Initially I was apprehensive because of many vendors' feedback about uncertain tariff terms, but these guys shipped from CA: no import hassle.
The product: solid, and a perfect fit. No bending, forcing, up-drilling.

I finished the whole living room/bedroom with a 1" gym mat: to function as a shock absorber for my power station, fridge, HVAC, and to have a little more insulation (and comfort) under the mattress.
First attempt at comfort: cut in a memory foam pad, which felt good, but was too cumbersome in concert with the drawer slide out.
Next: sheepskin. Felt really good, but same issue.
Back to an REI AirRail sleeping pad for now, until I find something better.

The HVAC inlet/exhaust is through a foam board (shipping/packing material) squeezed into the window. We'll see how this holds up; may have to go through the sun roof.

2 setup tests in Anza Borrego: the biggest upgrade on the second trip was one of the cheapest parts (around $15): a rechargeable (USB) water pump/dispenser for the Scepter container.
On Trip One I only had a home made pressurized Scepter with a garden hose and nozzle. Workable, but man, with the little pump, - what an improvement in creature comfort level!

Cooking: induction. (didn't even forget the extension cord)

When I read your mention of the water pump..I had a big smile

. I did basically the same thing with my RV trailer. I grew increasingly frustrated (and wet) from trying to manually pour water into my RV tank via a funnel. Duh.

So I ended up with a USB rechargeable, submersible pump (shower kit w/2 batteries) that fits into most water containers. It’s fast, pumps up to about 7’ vertical.

Works like a champ, no longer dread my water refills. Yay, sit back, light a cigar, sip some cognac!
